The first Berkshire Center Community Supper of the year was a great success! We had Swedish meatballs (we made 275 meatballs!) with gravy over egg noodles with peas and a yummy carrot raisin salad. For dessert, we made homemade truffle brownies with chocolate ganache topping, garnished with strawberries.
Eric Sundman gets kudos for managing the dessert serving and prep. He made beautiful “fanned out” cut strawberries, and he acted like a professional chef! Other students who get kudos are: Kelly Jacobetti and Josh Tito for performing double duty of setting up and cooking all afternoon; Erica Florin for coming by at 12:30pm to see if she could help cook even though she was not scheduled to (what a blessing, since all of my cooks did not show!) and Matt Curtis, who also volunteered to help set up. Daniel Barrett, Jimmy D’Ambrosio and Joe Wilson also gave an extra hour or so to help with the cooking in the afternoon. Thanks to Jacob Dresdale for being flexible with his job assignment and helping to get the dishwasher going.
It turned out to be a gourmet feast serving approximately 65 people with hardly any leftovers. It was a good time to witness our students hard at work for a true community service event.
